General Manager

Erin joined The Wolseley Hospitality Group’s Colbert in September 2017. But her passion for the industry was ignited long before – as a school leaver, a role at the 5-star hotel One Devonshire Gardens in Glasgow kindled her love of restaurants. Keen to develop further, she then moved to Hotel du Vin, before relocating to London in 2015 for The Mantas Collection. She assumed the role of General Manager at Fischer’s in December 2018 and in 2022 after having her first child, moved into training as Head of Management Talent Development.  It wasn’t long before her love for the restaurant floor was reignited, deciding to take on the position of General Manager at the newly refurbished Bellanger. ‘Like many in this industry, I’m a real people person,’ she says. ‘From coaching the team to building relationships with our guests, its the people that really matter and drive me to achieve the best.’

Head Chef

In 2013, Mauro began his journey with The Wolseley Hospitality Group when he joined Chelsea’s Colbert as Senior Chef de Partie. Prior to that, he worked for Marco Pierre White restaurants in London and in Sydney, Australia, at city favourite The Winery.  

From Colbert, Mauro moved to The Delaunay, as a Junior Sous Chef, before being promoted to Sous and then Senior Sous in 2017, where he worked under Head Chef Christian Turner. Since November 2021, he has taken the reins at Bellanger in Islington as Head Chef. ‘Working my way through the ranks has meant meeting many inspiring people,’ he says. ‘Now, I’m enjoying evolving our offering here at Bellanger – I’m excited by new tastes, seasonal cooking and dishes that blend the best of European heritage.’

With a career that’s spanned more than twenty years, taking him from serving drinks at an Irish racecourse bar to heading up the opening of Goodman City, James joined Bellanger in 2023. He tells us why childhood memories of fishing with his uncles and foraging with his parents have helped shape a lifelong passion for hospitality.
